Our Mission is to entertain and re-educate people about nutrition and healthy eating by providing information on the nutritional and medicinal value of uncultivated, wild edibles. We focus on the edibles that abound in our local environment, often characterized as “weeds” and mischaracterized as a nuisance.
Melissa Sokulski is a licensed acupuncturist and massage therapist trained in the practice of Eastern and Holistic medicine receiving a masters degree in acupuncture and Chinese herbology in 1996 from the New England School of Acupunture.
She and her husband David are the founders and proprietors of the Birch Center for Health in Pittsburgh, Pennsylvania.
Melissa is a well-recognized in Pittsburgh as an expert on Wild Edibles and Raw Food having organized and led many Wild Edible Walks around town sponsored privately and by the City.
Jason Oliphant comes to Food Under Foot with a Western Medicine background, working in Diagnostics with a focus on Musculoskeletal and Sports Imaging. He spent several years in academics teaching at Washington University in St. Louis. He now resides in the Pacific Northwest Puget Sound Region and chronicles his journey from the conventional modern western lifestyle to becoming an expert in Wild Edibles, examining some of the shortcomings of Western Medical Education.
He is the brother of Melissa Sokulski.
David Sokulski has his BS in Chemistry and worked as a Chemist for 5 years.
David holds a masters degree in acupuncture and Chinese herbal medicine from the New England School of Acupuncture, and is licensed to practice acupuncture by the Pennsylvania Board of Medicine.
He is currently found behind the helm of the Birch Center for Health in Pittsburgh.
He shares his expertise of Wild Edibles and Raw Foods with us, joining Melissa in the talks, walks and workshops held around Pittsburgh.
Ella Sokulski is our resident pixie sprite raining laughter and energy on all she encounters.
She makes many-a-cameo appearance on videos and podcasts around Food Under Foot.
